Ingredients
Scale
- 12 baby potatoes
- 4 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1 cup shredded cheddar cheese
- ½ cup cooked and crumbled bacon
- ¼ cup sour cream
- 2 tablespoons chopped green onions
- 2 tablespoons chopped fresh parsley (optional)
Instructions
Creating Crunchy Mini Potato Skins is straightforward if you follow these simple steps:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Potatoes: Wash the baby potatoes thoroughly and dry them. Prick each potato several times with a fork to allow steam to escape.
- Oil and Season: Rub the potatoes with olive oil and sprinkle with salt and black pepper.
- Bake the Potatoes: Place the potatoes on a baking sheet and bake for 25-30 minutes until tender and easily pierced with a fork.
- Cool and Cut: Allow the potatoes to cool for about 5 minutes. Once slightly cooled, cut each potato in half lengthwise.
- Scoop Out the Flesh: Carefully scoop out some of the flesh from each potato half, leaving a thin layer to maintain the structure.
- Drizzle Oil: Brush the insides of each potato skin with a little more olive oil and season with salt and pepper.
- Add Toppings: Fill each half with shredded cheddar cheese and crumbled bacon.
- Second Bake: Return the potato halves to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the edges are crispy.
- Garnish and Serve: Once done, remove from the oven, and top with sour cream, chopped green onions, and parsley if desired.
